Lisa Carlson

Enrichment and Substitute Guide

Lisa's passion is to help young people with food allergies and other dietary restrictions enjoy their food, learn to speak up and advocate for themselves. She encourages students to create healthy habits and embrace a positive body image through nutrition, mindful eating, and physical activity.


Lisa also loves to lead “teaching kitchens” where students learn cooking basics. She has extensive experience in nutrition and wellness counseling with students, and currently works with several universities: Elmhurst University; University of Alaska, Fairbanks; Portland State University and Seattle University. She also was a culinary nutrition instructor for iCOOK after-school program, working with students ages five to 12 in the Chicago suburbs. Prior to that, Lisa worked in food journalism as an associate food editor and articles editor for Glamour and COOK’s Magazine.


Lisa completed her bachelor’s degree in nutrition sciences from Cornell University, her master’s degree in nutrition communications from Boston University, and her dietetic internship from Oregon Health Science University in Portland, Oregon.  She loves to cook, garden, bike, hike and play pickleball. She resides with her family in Riverside.
